Obviously, this was breaky after the salmon pasta. I never really ate ricotta until awhile ago - funny looking stuff - but now i use it as much as i can. I buy the light one, which is super low in fat and so versatile. It can be used for sweet or savory - think baked ricotta cake or spinach and ricotta pie.
Anyway this is a great breakfast/lunch if you want, i am so hungry right now i would smash one!
Ricotta, avo and smoked salmon muffin
4 English wholemeal muffins
8 tbsp light ricotta
8 slices smoked salmon
This is so simple i almost don’t want to write it up! Toast muffins, butter if you like, then spread avo, add salmon and dollop ricotta!
Can’t fault this on health (bit of butter occasionally is totally acceptable) or easiness and only $10 for 4
